A postcard from our chefs...

Jambo

And welcome to our kitchen at Chem Chem - the heart of any home and the life force of a safari. Time on a journey is a series of moments, connected by food. And so our approach to meal time is to create unexpectedly intricate, mouthwatering dishes.

Our team of chefs, many of us local to Tanzania, creates recipes using produce grown in our gardens. We draw inspiration from the owners' European heritage, as well as the bush around us. In turn, our menus reflect the story of Chem Chem - Fabia and Nicolas with their European roots, as well as our collective passion for Tanzania.

Each meal is a perfect blend of taste, beauty and connection to the land. This truly is amongst the finest food found in Tanzania, download a sample menu for yourself.

All meals, snacks and house beverages are included and with three courses at lunch and dinner (and there are two options per course, so you will be spoilt for choice!).

From dusk to dawn, we take guests along a culinary journey connecting one experience to another... It's a nourishing safari like no other.

Here's some food for thought: when did you last sip on freshly brewed coffee, enjoying an abundant bush breakfast beneath a baobab tree as zebra amble by?

Our mango chutney...

Spice up your festive season table with this delicious & easy to prepare recipe. 

 

    INGREDIENTS:

    1 tbsp sunflower oil
    1 red onion (finely chopped)
    2 tsp mustard seeds
    1 tsp turmeric
    2 mangoes (peeled, cored and chopped into small chunks)
    ½ red chilli (deseeded and finely chopped)
    1 thumb-sized piece ginger (grated)
    100g white sugar
    100ml apple cider vinegar

    METHOD:
    It's easy - combine the sugar and vinegar & bring to the boil in a pot.
    Then, place all of the other ingredients and cook on a low temperature, stirring often, until you have a chutney consistency (45 mins - 1 hour). Enjoy!
